Yogurt Berry Bark

I am perpetually hunting for new healthy-ish snack ideas. This would happen to anyone whose three year old asks for a snack every hour. So one day I came up with this idea for some yogurt berry bark. It was simple to put together and a nice quick kitchen project for Charlie to help with.

Measuring isn’t necessary with this recipe. Just throw some tasty berries in a bowl of yogurt and stir. We used plain yogurt with a spoonful of sugar. I’m sure many other flavors would be just as good.

Make sure to cut up the berries a bit to get all that juicy flavor mixed into the yogurt.

Spread it out on a cookie sheet topped with parchment paper.

And top with some melted chocolate. Of course!

Lick that chocolate melting dish clean!

Freeze for a few hours and break it up into pieces.

Charlie found this snack to be a bit too hard to eat after freezing, so it didn’t quite fix my snack-time woes. But I enjoyed it!

A Grain Free Breakfast: Yogurt Bowl

One of the more significant changes we’ve made as we’ve sought to cut down on the grains we eat has been in our breakfast routine. Breakfast is a meal that usually happens in a rushed state. I don’t have time to get ambitious with eggs or bacon or fancy breakfast tacos. I don’t even have time to stop and think about what options I have. I need breakfast to be the same every single day.

Stuffed Acorn Squash

There’s something about fall that brings out the wannabe chef in me. I think it’s because fall seems to encourage a lot of cooking that involves combining fruits and vegetables with sugar and cinnamon. You can convince your brain that you’re having something healthy, but your tongue knows that it’s really dessert.

Pasta Any Way you Like It

I love a meal that doesn’t require much planning. If it just so happens to be delicious that’s even better. One of our favorite meals around these parts is this simple and flexible pasta dish. It works with almost any vegetable and any kind of meat, so it’s a great dish for those days when you aren’t sure how the odds and ends in your pantry are going to make a meal.

Parmesan Tilapia

I’ve been working on simplifying our meals to make cooking at home easier, and therefore more frequent. One of the meals that has found a regular place on our table recently has been Parmesan Tilapia. It’s super quick, super easy, and super tasty.

It’s one of those recipes that’s so simple I don’t even use a recipe or measuring cups anymore. I just throw stuff in a bowl and call it a day. When you’re basically covering a piece of fish in Parmesan cheese there’s not much you can do wrong.
